Yellow Pepper and Fruit Puree

Are you one of those moms or dads who loves to experiment around in the kitchen with their food? Do you try new foods? Is your little one an adventurous eater? Because if you are, then most likely your kids will notice your courageous side and be a connoisseur too. When my Elle was a baby I loved mix matching her purees. The peas with anything was the most comical. I have used peppers before and they are a huge hit. Yellow peppers contain folate and are a good source of vitamin A. Not to mention the orange, red and, yellow are the sweetest and most admiring to baby. And if you want to snack on them while you make this, know that peppers are low in calories so double win for you.

This pepper recipe is in my rotation of mixes and matches of purees. I love adding hints of spices or even the simplicity of fruits to balance this recipe out. You can try adding these extra ingredients to the puree for variety:

– Mix in plain organic Greek yogurt
– Serve over brown rice
– Puree strawberries or flax seeds for a toddler power smoothie
– Mix with buttered pasta
