Veggie Tots


Once kids hit the finger food stage, it can be a challenge giving them healthy snacks with all of the temptations of packaged foods. We like to make these veggie tots to snack on, which can be kept in the refrigerator for a few days to enjoy. They are made with broccoli, carrots, egg and breadcrumbs. My daughter loves to dip them in hummus!


Veggie Tots


  • 1/2 cup shredded carrots
  • 1 cup steamed broccoli
  • 1 garlic clove, chopped
  • 1 egg
  • 1/4 cup cheddar cheese
  • 1/2 cup bread crumbs
  • 1/2 tsp onion powder
  • Canola oil


  1. Add all ingredients, except for the oil, to a Baby Bullet pitcher.
  2. Heat the oil in a large skillet over medium heat.
  3. Preheat the oven to 350 degrees F.
  4. Form 1-inch balls in your hands (if the dough is to wet, stir in more breadcrumbs) and flatten.
  5. Fry in the pan, then transfer to a baking sheet and bake for 10 minutes.
