Valentine’s Day Project

Arts and crafts are our thing. A day in the life of a toddler can start to get boring if you’re forced to stay in the house during bad weather. As for us parents, we are always trying to keep them busy with reading, playing, adventures, being silly, and, in our case, a chance to sit down with a craft project. If that means getting messy with paint and having more of a mess to clean up once in a while, I’m in.

So, my daughter Elle and I decided to make a mess today by baking and decorating our very own cookies.

I dropped the ball this year on getting Elle’s daycare teachers Christmas gifts or even something sweet. I decided that we were going to make up for my negligence by making these Valentine’s Day sugar cookies from scratch. Who doesn’t love fresh baked sugar cookies? Plus, with my recipe, these cookies are deliciously soft and chewy. I have a feeling they will love them.

Sugar Cookies Recipe

Ingredients

  • 1 pound soft butter
  • 2 cups sugar
  • 2 eggs
  • 2 Tbsp milk
  • 2 tsp. baking powder
  • 2 tsp. vanilla
  • 2 tsp. salt
  • 4 cups flour

Instructions

  1. Using a mixer with a paddle attachment, cream the butter until smooth.
  2. Scrape down the sides of the bowl with a spatula.
  3. Add the sugar and cream and continue to mix for for 2-3 minutes.
  4. Scrape down the bowl.
  5. Mix in the eggs and cream until well incorporated.
  6. Add the milk, baking powder, vanilla, and salt, mix and scrape down the sides.
  7. Add the flour in two parts.
  8. Wrap the dough in plastic wrap and refrigerate for 1 hour.
  9. Roll out, using cookie cutters to cut out your shapes, and place on a cookie tray lined with parchment paper.
  10. Bake at 350 for 12 minutes.

Royal Icing

Ingredients

  • 2 cups powder sugar
  • 1 egg white or 2 Tbsp half and half

Instructions

  1. Mix the ingredients together until you reach your desired consistency.
  2. If it’s too thick, add more egg white or half and half.
