The Chickpea Bible

In the years that I’ve been writing for The Baby Bullet Blog, a few of my articles have focused on one food in dramatically different settings. I’ve addressed the usefulness of cauliflower and even the pleasure of pumpkins, but this week I’m doing something I’ve never done before.

I’ve gone vegan.

Consider it a bit of an experiment. I have friends that have gone vegan and swear by it. I’m curious how my body will operate under this new system. But I’ll admit that in my newfound veganism I’ve been struggling to find ways to get decent protein sources that my children and I enjoy.

Enter the chickpea.

Some know it as a garbanzo bean. Some swear they are completely different and how dare you say otherwise?! Either way, you know what I’m talking about: a fiber and protein rich legume with a slight chestnut flavor. We’ll just call it by its English name: the chickpea.

I’m learning all kinds of recipes with this protein source, and much of it comes from my Forks over Knives app. Here’s a couple of my family’s favorites so far:

  1. The “No Tuna” Salad Sandwich. This is surprisingly easy to make and very yummy! Instead of using regular bread, though, I went for Nuco’s Coconut wraps. Very tasty and surprisingly durable!
  2. The Chickpea “Burger” Patty. This recipe from the Minimalist Baker won me over with the clever use of sun-dried tomatoes (which I love). I didn’t have any issues with the patty holding together, either. Win, win!
  3. Pumpkin Spice Roasted Chickpea Trail Mix. This is a great snack option from Eating Bird Food. My only complaint is the use of Stevia. If I’m going to use sugar, I’d rather use some form of the real stuff. But that’s just me.
  4. Veggie Pizza with Chickpea Crust. Ok, I’ll admit I haven’t tried this one yet. But I had such a surprisingly good experience with their pizza with creamed spinach & sun-dried tomatoes that I feel like I have to give this one a go.

I’ll admit without the versatility of the chickpea, I might be a little lost in this vegan thing. But I’m willing to give anything a try! Have you ever thought about going vegan but feel too overwhelmed to make the switch? I can’t rave enough about the Forks over Knives app. It generates a shopping list for every recipe you choose!
