Tangerine Muffins

What my toddler loves most about these refreshing tangerine muffins is the chunks of fresh chopped tangerine baked into them. I love to have some of these muffins on hand for a quick afternoon snack with a glass of milk, or as to-go food when we are out and about. I use my Baby Bullet to blend half of the chopped tangerines with yogurt and a little melted butter for an irresistible citrus flavor.

Tangerine Muffin Recipe

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1/3 cup sugar
  • 1 cup vanilla yogurt
  • 1 cup chopped tangerines
  • 1 tbsp grated tangerine peel
  • 1 egg
  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 400 degrees F.
  2. Add the flour, baking powder and sugar to a large bowl.
  3. Add the yogurt, half of the chopped tangerines, egg, butter and peel to a Baby Bullet pitcher and blend until smooth.
  4. Pour over the dry ingredients, add the remaining chopped tangerines and mix well.
  5. Distribute batter evenly among a 12 paper-lined muffin tin.
  6. Bake for 18 minutes, then cool before eating.
