Sweet Potato Noodle Soup

Whenever I make soup for my kids, they always pick out the vegetables and meat. Then they just sip the broth and eat the noodles. I get so frustrated because they refuse to eat sometimes the most nutritious part of the soup! I mean, who doesn’t love soft carrots ;). This soup will solve all of those problems, because it’s simply broth and noodles. Except, the broth is blended with a sweet potato to give it the benefit of vegetables without bribing your kid to try one bite!

Sweet Potato Noodle Soup Recipe

  • ½ large sweet potato, peeled and steamed
  • 2 ½ cup vegetable broth
  • Sprinkle of nutmeg
  • Dash of salt and pepper
  • 2 cup fideo pasta or cut spaghetti

  1. Bring a pot of water to boil, then cook pasta. The pasta works best when cooked to al dente.
  2. White the pasta is cooking, in the larger Baby Bullet Blender, add the sweet potato and broth.
  3. Blend until completely pureed.
  4. Add seasonings, taste and adjust. Remember to add seasonings lightly because your baby is still discovering their taste buds.
  5. Once the pasta is cooked, drain it and then add it back to the pot. Pour the broth into the pot.
  6. Serve the soup slightly warm, or add an ice cube to cool it down.
