Sweet Potato French Toast

I’m always looking for new ways to incorporate veggies into my kid’s meals. I’ve had success adding veggies into things like pancakes and waffles, and now I’m adding it into their French toast. Luckily with the help of the Baby Bullet, my kids barely noticed the difference which was a win in my book!

Sweet Potato French Toast Recipe

  • ½ large cooked sweet potato
  • 3 eggs
  • 1 tsp. vanilla
  • ¼ c. milk
  • 1 tsp. cinnamon
  • 1 loaf of bread

  1. In the Baby Bullet blender add the sweet potato, eggs, vanilla, milk, and cinnamon. Blend until creamy.
  2. Add egg mixture into a shallow bowl, preheat and grease a griddle, and begin to dip bread into egg mixture.
  3. Cook French toast on each side for 2-3 minutes on low medium heat, or until it’s golden brown.
  4. Add butter and syrup to cooked French toast and enjoy!
