Sweet Potato Cheddar Mac N’ Cheese

This Mac N’ Cheese recipe is a miracle recipe. Not only did my pickiest eater eat an entire bowl of this, but I was able to enjoy a bowl myself.  A lot of times us parents can’t always enjoy the same food as our kids due to their picky-ness, and our desire to not eat baby food.

This is an easy, make-at-home mac n’ cheese that your whole family will love, all the while adding a boost of nutritional value with a secret pureed veggie in the sauce.

Sweet Potato Cheddar Mac N Cheese

Ingredients:

  • 1 sweet potato, peeled, diced, steamed
  • 2 tb. Butter
  • 2 tb. flour
  • 2 1/2 cups whole fat milk
  • 1 c. shredded cheddar cheese
  • 1/4 cup parmesan cheese
  • 1 tsp. salt
  • Pepper to taste
  • Sprinkle of nutmeg
  • 1 pound uncooked pasta

Instructions

  1. Bring a large pot of water to a boil, and cook pasta according to package directions. Drain and set aside.
  2. In the Baby Bullet blender, puree the sweet potato until creamy. Set aside.
  3. Heat the butter in a skillet on medium heat. Whisk in the flour, cook and stir for 2 minutes.
  4. Slowly whisk in the milk, then the sweet potato puree.
  5. Cook and whisk continually while the mixture comes to a boil, then allow it to thicken for about 3-5 minutes. Once it has thickened, add your cheese and spices. Adjust if needed.
  6. Pour pasta sauce on top cooked pasta. Fold sauce into pasta, top with additional parmesan if wanted.
