Sweet Potato or Carrot Pancakes


At least once, sometimes twice a week we have pancakes for dinner. My youngest kids all the way up to my older kids, including my husband, love breakfast for dinner. I love it because I don’t have to spend all day in the kitchen preparing something they won’t eat :).

These pancakes are full of fiber, perfect for growing babies! We love to eat these pancakes in the Fall season because the spices go perfectly with that time of year, but feel free to have these year around. You can also switch out the sweet potato puree for CARROT puree!


Sweet Potato OR Carrot Pancakes


  • 1 small sweet potato, or 1/2 c. chopped carrots, peeled, diced, steamed
  • 1 cup whole grain pancake mix
  • 1 egg
  • 1 tb. vanilla
  • 2 tb. brown sugar
  • 1 tsp. pumpkin pie spice
  • 1/4 -3/4 cup milk, depending on pancake texture desired. (less milk=more cake like texture)


  1. Blend the cooked carrot or sweet potato in the Baby Bullet Blender until creamy, set aside.
  2. In a bowl whisk together all of the ingredients, including veggie puree.
  3. Adjust milk to desired consistency.
  4. Preheat and grease a pancake griddle. Cook pancakes 1-3 minutes on each side, or until pancakes are golden brown and cooked all the way through. Top with butter, pure maple syrup, and a sprinkle of cinnamon and powdered sugar :).
  5. Enjoy!
