Strawberry Beet Popsicles

Every time I go to the grocery store, my kids beg me to buy popsicles. They love to sit outside and eat them as they play in the backyard. I admit, I love them too because it keeps them busy. But usually store bought popsicles are full of sugar and other additives, so every once in a while I love to make ‘healthier’ popsicles. This recipe is probably on the healthier side, as it includes BEETS! It’s blended with sweet fruit and a hint of cocoa powder, so don’t worry about your kids noticing a difference.

Strawberry Beet Popsicles

  • 1/2 cup strawberries
  • 1 banana
  • 1 medium beet, peeled and steamed
  • 1 tsp. vanilla
  • 2 tb cocoa powder
  • 3 dates, pitted
  • 2 tsp pure maple syrup

  1. In the Baby Bullet Blender, add the beet. Blend.
  2. Next add in the rest of the ingredients, blend until completely creamy.
  3. Add puree to a popsicle mold. Freeze for 4 hours or until solid.
