Roasted Yellow Squash with Olive Oil and Cilantro Puree

I find that baby food is a reflection of how we eat. My family and I are eating more healthy lately, since it’s up to me to keep my infant daughter healthy. So, when I’ve gone to the store lately, I end up buying things I normally wouldn’t buy for myself, like carrots. Gross. I’ve never been a fan. But my daughter Elle loves them! Beside the simple carrot puree, I’ve gotten creative and made a soup with them that she absolutely loves.

This week I wanted to explore with yellow squash. I love making squash casserole. So, I made one for my family and then pureed a steamed squash version version in my Baby Bullet just for her.

I bumped it up with a fun new flavor by adding cilantro. I made one plain and one with the cilantro just in case she wasn’t crazy about it. I love introducing new, basic flavors, as well as exciting, new, savory flavors to her palate. It gets her excited for new things and helps her mind and taste buds develop! “What is that flavor you’re feeding me, Mom?”
