Date puree is one of my favorite alternatives to mashed or pureed bananas. It’s equally sweet and totally versatile, which means you can replace any banana puree with date puree!
This bread is subtly sweet, with a hint of citrus. I made it for my girls to have as a quick snack when they want something between meals. We love to warm it up a little in the microwave, with a little bit of butter and honey drizzled on top! It’s such a treat!
Pancake Mix Orange Date Bread Recipe
Ingredients – Date Puree
- 1 cup dates
- water
Ingredients – Bread
- 2 cup whole grain pancake mix
- 2/3 cup date puree
- 1 tb. molasses
- ¾ cup orange juice
- 1 egg
Instructions
- To make the date puree, add dates to a bowl and fill with water. Fill water until the water reaches about a half an inch over the dates. Let soak overnight. (You can also boil the dates in water, then puree to speed up the process.)
- Once they have soaked overnight, add the dates to the Baby Bullet Blender and puree until creamy. This recipe will make more than enough puree for this recipe, so you will definitely have leftovers!
- In a mixing bowl, add all of your ingredients. Whisk together until batter forms.
- Preheat oven to 350 degrees. Spray a mini loaf pan, and pour batter into the pans.
- Bake for 20-27 minutes, depending on your oven.
