Green Bean, Carrot and Rice Purée

As my daughter is getting older, it seems her pickiness about vegetables is getting worse. The only way she will eat them is hidden in a purée, like this green bean, carrot and rice one. I first steam the carrots and green beans and cook a small pot of rice. Once cooked, I blend them all together with a little bit of water and serve it to her warm. It makes me happy knowing she is getting her vegetables in through this healthy homemade purée. You can adjust the texture based on your baby’s age. Younger babies should have very thin purées, while toddlers can handle a chunkier texture.

Green Bean, Carrot and Rice Purée

Ingredients

  • 1/4 cup chopped, steamed green beans
  • 1/4 cup chopped, steamed carrots
  • 1/4 cup rice
  • 1/2 cup water

Instructions

  1. Add all ingredients to a Baby Bullet pitcher and blend to desired texture.

Makes 1 cup.

    I have the same issue with my 2 year’s old son. He refuses to eat tomatoes and other vegetables. Only cucumbers. But only a few weeks before that he liked to eat tomatoes, avocado and all other vegetables. Don’t know what happened to him. Now I’m trying to hide these vegetables inside the meals. But it’s not so easy, my son checks the food and if he finds something suspicious, he refuses to eat all the meal! Ouch. Now I bake him the eggs with hided tomatoes pieces in the oven so he doesn’t see the tomatoes outside. Meantime it works:).
