Cherry Bars

When I was baking these cherry bars with my toddler the other day, I almost ran out of cherries! She loved to eat all of the fresh cherries right after I was done removing the pits from them, until they were almost gone. I was happy when they came out of the oven and she loved to eat the bars even more! These cherry bars were a big hit, and a perfect take-along snack or breakfast. They are made with fresh cherries (pits removed) and oat flour, oats, applesauce and coconut oil.

Cherry Bar Recipe

Ingredients

  • 1 cup cherries, pitted and sliced
  • 1/4 cup water
  • 1 cup oat flour
  • 1 cup oats
  • 2 tbsp brown sugar
  • 1/2 cup applesauce
  • 1/4 cup coconut oil, melted
  • 1/4 tsp salt
  • 1/2 tsp baking soda

Instructions

  1. Add the water and cherries to a pot and bring to a boil. Simmer for 5 minutes, then cool.
  2. Preheat the oven to 325 degrees F.
  3. Add the remaining ingredients to a Baby Bullet pitcher and blend to form a dough.
  4. Spread half of the dough into an 8×8 baking dish (greased), then top with the cherries.
  5. Drop the remaining dough on top of the cherries.
  6. Bake in the oven for 25 minutes, until the top is golden brown.
