Carrot Nuggets


I always felt like baby to toddler food was a big jump in nutrients. A baby usually eats pureed fruits, grains, and vegetables. Then as a toddler it’s a lot easier to hand them processed or packaged food because it’s easy in many ways. I have always loved making homemade chicken nuggets, but veggie nuggets are even more fun. It’s definitely hard as kids get older to convince them vegetables are tasty. Baking them into nuggets where they can dip into their favorite dressing is a great way to get those veggies into your kids!

Carrot Nuggets


  • 1 cup baby carrots
  • 1/3 cup seasoned bread crumbs
  • 1/2 cup parmesan
  • Light sprinkle of salt and pepper
  • 1 egg


  1. In the larger baby bullet blender, add ½ of your carrots. Blend until the carrots are shredded. You may have to stop the blender, stir the carrots around, and continue blending. Remove carrot shreds and blend the rest of the carrots the same way. Add them into a bowl.
  2. In a mixing bowl add all of the ingredients and stir together with a fork.
  3. Preheat oven to 350 degrees.
  4. Using a small cookie scoop, scoop batter onto a prepared baking sheet. Flatten down until the nuggets are ½ an inch thick.
  5. Bake for 10 minutes, flip the nuggets, then bake an additional 10 minutes. Let cool before serving.
