Growing up beets had the reputation of being a vegetable that my grandmother loved to eat. Like all great grandmothers she expected her grandkids to also enjoy the brightly purple root vegetable. I was not a fan. Until I became a mother and discovered how nutritional they were. Beets are stocked with a wonderful amount of potassium, vitamin A, and calcium. My doctor always told me feed plenty of calcium since it plays an important role in healthy development of your little one. Beets are also very high in fiber and a great natural approach to incorporating high fiber foods into your baby’s diet. And mom, if you eat it, it can help with your post pregnancy weight loss.
I figured that I never liked beets was because I was introduced to it later in life, rather than acquiring and accepting the taste early on. But still, some baby’s might not like the taste, so I paired it with the sweetness of the banana and mango. Your babies will love this recipe because you are teaching them new flavors and how great fresh beets are in their diets.
