Asparagus, Carrot, and Apple Purée

My secret to getting my toddler to eat vegetable purées is adding a sweet fruit to the mix. It works every time! In this asparagus and carrot blend, I add an organic gala apple to sweeten it up. My daughter is crazy about apples, so she loves the flavor it adds to this vegetable purée. Carrots are on the sweet side, too, which makes them a perfect pair with the apple flavor. You can keep this purée as it is, or add chicken or rice to make it more filling if using it for a meal.

Asparagus, Carrot, and Apple Purée

Ingredients

  • 4 asparagus spears, chopped
  • 1 carrot, peeled
  • 1 gala apple, cored and sliced

Instructions

  1. Bring a pot of water to boil and add the carrots and asparagus. Cook for 7 minutes, until tender, then cool.
  2. Wait for the cooked carrots and asparagus to cool then add the cooled carrots, asparagus and apple slices to a Baby Bullet pitcher and blend until smooth.
