Apple Pecan Carrot Zucchini

The ingredients in this recipe are undoubtedly fall but when my little one gets bored with her go-to summer purees, I always find myself making this recipe. So, the next time you get tired of making a dish with summer vegetables, try this one out. I find that soaking the pecans in water is the key to helping them blend into a smoother puree.

Apple Pecan Carrot Zucchini

Ingredients

  • 1 carrot (peeled and steamed)
  • 1/2 zucchini (steamed)
  • 1/2 apple (peeled and diced)
  • 1/4 cup pecans (soaked overnight)
  • 2-4 tbs water

Instructions

  1. In the Baby Bullet Steamer add the diced carrots and zucchini on setting 4 till tender.
  2. Drain the water from the pecans.
  3. Then in the Baby Bullet add the apples, pecans, and steamed veggies.
  4. Blend till smooth. Add the water in tablespoons to make a more smooth consistency.
