Almond Poppy Seed Muffins

One of our favorite activities to do on a bad weather day is bake together. This almond poppy seed muffins recipe is a favorite of ours, and each time we make a batch they are gone by the next day! My toddler loves to help scoop the batter into the muffin cups, and this teachers her good hand-eye coordination as well. Enjoy these muffins as an afternoon snack with a cup of milk, or as a quick breakfast item.

Almond Poppy Seed Muffins


  • 1 cup whole wheat flour
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • ¾ cup vegetable oil
  • 1/2 cup honey
  • 1 egg
  • 1/2 tsp almond extract
  • 1 tbsp poppy seeds


  1. Preheat oven to 350 degrees F.
  2. Add all ingredients to a Baby Bullet pitcher (wet ingredients in first) except for the poppy seeds and blend.
  3. Stir in the poppy seeds.
  4. Line a muffin pan with paper liners and fill ¾ with batter.
  5. Bake for 25 minutes.

Makes 12 muffins
